Your strawberries are beyond ripe? This refreshing lemonade, the third in my Vegetarian Barbecue Series, is barely sweet and absolutely thirst-quenching. My kind of alcohol-free cocktail with a touch of mint to go. Cheers!

Strawberry Lemonade
Ingredients
- 625 ml (2 1/2 cups ) whole hulled strawberries
- 375 ml (1 1/2 cups) fresh lemon juice (5 to 8 lemons)
- 125 ml (1/2 cup) sugar
- 1 L (4 cups) water
- fresh mint
Instructions
- 1. In food processor or blender, purée strawberries. Transfer to a large pot and bring to a boil with lemon juice and sugar. Reduce to medium-low heat and simmer 3 minutes. Pass through a fine sieve lined with cheesecloth and placed over a bowl. Press strawberry pulp to extract as much liquid as possible. (The resulting syrup will keep upt to one week, transferred to a sealed container and chilled.)
- 2. In a pitcher, combine strawberry syrup, water and ice cubes. Serve decorated with fresh mint. You can also use the syrup to make individual servings, adding water until desired taste.
