Giovanni Apollo is one of 80 top chefs who participated in my latest cookbook, À la bonne franquette. He also takes part in my next book project, which is hush-hush for now. Next week, Montreal bloggers have organized a cook-up to test the book. Chef Apollo heard about the evening and not only did he offer his kitchens to cook in, he will be in attendance to judge and be judged. I will be making his Eggplant antipasti with hot peppers and oregano, expectations are high.
